Born in the heart of the great Thar desert in Dhorimanna, Barmer, Thar Bites was founded by Dinesh Kumar with an unwavering purpose — to revive the authentic Vedic craft of 100% pure A2 Desi Cow Bilona Ghee.
In an age of industrial dairy where speed and shortcuts dominate, commercial brands boil raw cream using mechanical centrifuges. At Thar Bites, we believe that true nourishment cannot be rushed. We follow the ancient five-stage Bilona method described in Ayurvedic texts.
The Sacred Thar Desert Cows
Our milk is sourced directly from native Tharparkar and Rathi cow breeds of Western Rajasthan. These resilient indigenous humped cows graze freely under open desert skies, feeding on wild drought-tolerant medicinal plants like Dhaman grass, Kair, and Sangri shrubs.
Their milk naturally contains the pure A2 beta-casein protein, free from artificial hormones, chemical antibiotics, or synthetic feed. This natural diet gives our ghee its characteristic warm golden color and intoxicating aroma.
The 5-Step Authentic Bilona Craft
How raw morning milk is slowly transformed into golden granulated Ayurvedic nectar.
Pure A2 Desi Cow Milk
Fresh milk is gathered gently from free-roaming indigenous humped cows without synthetic milking machines.
Natural Overnight Fermentation
The milk is simmered and naturally cultured into thick whole curd in earthen clay vessels, multiplying beneficial gut probiotics.
Bi-directional Slow Hand Churn
A wooden bilona is spun clockwise and anti-clockwise through the curd, gently separating pure white cultured makkhan.
Gentle Low-Fire Simmering
The cultured makkhan is slowly clarified over slow wood fire in open vessels until water content evaporates completely.
Natural Sediment Straining & Glass Packaging
Natural curds separate as golden grains settle. The warm ghee is filtered and sealed into sterile food-grade glass jars.
